Yemeni Fun

Here we are with Elder Buffet (left) and Elder Westin (right) after the Yemeni meal. It turned out pretty well. Most of us ended up mixing the Lentil Stew, Fatah (beef dish), cottage cheese, and couscous together. It was quite tasty. My favorite dish was the Lentil Stew. Here's the recipe:

Lentil Stew

Serves 4

1 cup lentils
1 cup yellow onion, finely chopped
2 cloves garlic, minced
1/4 cup spicy butter (butter with spices)
1 tablespoon berbere (an Ethiopian blend of spices)
1 teaspoon ground cumin
1 teaspoon paprika
2 cups tomato, chopped
1/4 cup tomato paste
1 cup water
1 cup frozen peas
Salt to taste
Freshly milled black pepper to taste
1/4 cup parsley, chopped

Rinse lentils and set to cook according to package directions while preparing other ingredients. They will take about 45 minutes.

Sauté onion and garlic in spicy butter, until onions are just translucent. Stir in berbere, cumin, and paprika and sauté for 5 minutes more.

Stir in tomatoes and tomato paste and simmer for 5 to 10 minutes. Add water and continue simmering.

When lentils are finished cooking, drain and add to the sauté. Stir in peas and cook until peas are tender, about 4 - 5 minutes. Add salt to taste and give a few twists of the peppermill, also to taste. Sprinkle with parsley.

Mmmm. I think my husband liked it too. He ate about 3 servings!

We have two great elders in our ward. They work very hard and really know the gospel. We've had some great discussions with them and have learned how to better share the gospel with our friends.

Here, you'll see a map of where we think Lehi & his family traveled after they left Jerusalem. Part of their journey was through Yemen. However, the place they think was Bountiful is in Omen.

This is an interesting website called the Nephi Project. A group of researchers got together to find the trail that Lehi & his family took. Interesting photos.

At the end of our meal, Elder Buffet picked our next country. We think Elder Westin will be transfered before our next meal, so it was Buffet's turn. He picked Switzerland. A new country...a new meal.
