Do you know about Esty? If you don't - add it to your to-do list for day "look up Etsy." My talented husband & I just opened up an Etsy store. Visit it at www.homestudio.etsy.com. We are still adding to it. So after you see it today, you'll want to check back in a few days. The plan is to sell his furniture and art as well as my silhouettes and any jewelry items that I make. I have some silhouettes in process that are just SO CUTE! I am so excited to show you!! (But you'll have to wait until I finish them) Ok, here's a little sneak peek at one...On a different topic, our Fijian meal the other night turned out great. The best part, in my opinion, was the fish. Here's the recipe:
Grilled Redfish
4 Eight Ounce Fillets of Fish (I used tilapia)
6 Garlic cloves crushed
2 Tsp. Grated Lemon Peel
1/3 Cup Olive Oil (extra virgin)
1 Bunch Basil (thinly sliced)
1/3 Cup Capers ( small ones)
1 Lemon (juice)
Salt and Pepper to taste
Whisk lemon juice, olive oil, crushed garlic cloves and grated lemon peel in small bowl to blend. Stir in capers and basil. Season vinaigrette with salt and pepper to taste. Let stand at room temperature.
Prepare your fire on your barbecue, (high heat) or use broiler. Season fillets with salt and pepper and coat fillets with vinaigrette. Cook until fish flakes, be careful not to break fillet when turning. When fish is done place fillet on platter and pour remaining vinaigrette over fish.
I used my new George Foreman Grill. This fish turned out great. The curry dish was really good too. But the Raita was a little different. It was good with the curry though.
We enjoyed the company of the elders and our friends Jenn & Jason Sloss. After every meal with the missionaries, we have them spin the globe and we pick a new country for next time. So (drum roll, please) our next country is Yemen. That should be yummy! You won't have to wait long to find out the results because our next meal is April 12.
